What I Ate Wednesday… on Thursday

Hey you guys! I'm here today with a What I Ate Wednesday… on Thursday. The title technically applies because these are my meals from yesterday… I'm just posting them today! I at some fruit in between my meals but I didn't have a change to photograph it but I figured you know what grapes and peaches look like :) I won't bore you with any more chit chat, here are the meals!


I was craving some avocado toast in the morning so I had it as my first breakfast ;) It was later followed with a peach and some grapes.


Lunch was another Mediterannean-ish plate. It's really not a traditional Med plate but the dolma and hummus make it passable I guess. I just don't know what else to call it!


For dinner I made this tasty giant quesadilla with Ezekiel Sprouted Grain Tortillas, TJ's fat free refried beans, lots of steamed spinach and some more avocado because I was apparently an avocado fiend yesterday.

So there are my eats from yesterday! I have a few pictures of meals for the end of the week and hopefully I can get a few more! I am just getting a bit stressed about the fair next weekend so I guess we'll see how the next 10 days go!

  1. I love avocado toast so much, and your lunch is making me crave Dolmas so much! I've never tried the Ezekiel tortillas, but I like their bread!

    1. I know, avocado toast is the best! I may have it for breakfast this morning :) I need to re-stock my dolma stash, I only have a few left! I really want to try making them myself but I have a feeling it will be an epic fail haha. The Ezekiel tortillas are good but they are a pain to work with. They freeze together in a chunk and you have to fully thaw the whole thing every time you want one. They are kept in the freezer at the store so I assume that is where they have to say. Not a terrible thing but definitely not convenient.

  2. You will never be deficient in Vitamin A. I cant believe how much you love carrots. Your teeth must be really strong too. Have you loved them since you were little?

    1. I think I love the sweetness in the carrots! They have been my favorite for as long as I can remember! My teeth are actually not that strong surprisingly! I'm very careful when I bite and chew ;)
