What I've Been Eating

Hey everyone! I know it has been a while since I've posted some meals I've been eating but I made an effort to start photographing my meals over the past few days (no this isn't everything, just what I've remembered to shoot!). It randomly started to get obscenely hot here over the past few days so you'll notice a trend of fresh, cooling food as well as hydrating foods. I've been really bad about drinking water lately so I've been working on that!

Anyway, here's what I've been eating!


Here is a cherry and banana smoothie. Honestly it wasn't my favorite smoothie I've ever had... it was very sweet and I couldn't drink a lot of it before feeling sick but it was good in theory! I'll stick to my cherry chocolate smoothies :)


Here is a fruit salad of pineapple, strawberries and fresh raspberries. I'm not a huge fan of raspberries or   raspberry flavored things (including jelly) but these looked really great so I figured I'd give them a shot. They were pretty good but I probably won't get any more. They didn't have blackberries which I would have preferred.

Leave it to me to have an oatmeal craving on the hottest day of the year but it is what it is. I gave in to it and made this gorgeous bowl of oats with cinnamon, banana, coconut and walnuts.


Here is a salad of romaine, cabbage, carrots, cucumber and apple and was later topped with a vinaigrette.


Sorry for the bad picture but this is Zucchini Noodle Lo Mein!! I randomly got it in my head that I wanted to try this and had gotten a spiralizer reviewed by Ingrid in this post. It is basically zucchini noodles, cabbage, a frozen medley of organic carrots, corn, peas and green beans, onion and garlic sauteed together and topped with gluten free tamari and black pepper. It's SOOOOOO good! As you can see it made a lot so I'll be eating this for days.

So there you have it, what I've been eating lately!! I will try to make these posts more regular and to try to stop being so lazy about taking pics. I hope you are all having a great week and Happy almost Friday to you! I'll just keep in mind that Friday is one day away from Saturday... which is my Friday. Have I confused you yet? ;)

  1. Let's go straight to the zucchini lo mein.... YAY! It looks so good, and I've been wondering what to make with my farmer's market zucchini. What did you think of the spiralizer?

    All of the fruit and salad look so fresh and cooling, as you said - perfect for the hot weather! Although, I can't wait for the cold mornings where I can dig into that beautiful oatmeal!!

    1. Haha love it! The zucchini lo mein was really delicious and I have tons left over which is always great! I definitely recommend giving it a try! I like the spiralizer, I thought it worked well. It is hard to clean and it definitely leaves a good sized stump at the end but I do think it works well.

  2. The zucchini lo mein sounds awesome! I've got to try that. The salad is great - love the apple addition. I used to do that a lot and then stopped because it was too sweet, but it's good with the right dressing. Very pretty fruit salads too. I'm a huuuge fan of raspberries!! They're pricey though, so maybe it's good that you aren't.

    1. Definitely give it a try, it was soooooo good! I love adding fruits to my salads, it is a nice contrast to all of the veggies. I have no idea why I don't like raspberries but I don't get to save too much because I LOVE blackberries which are also pricey.. as you know :)

  5. Wow, Sarah, lots of great looking food! It's all so colorful & fresh looking. Mike isn't a fan of raspberries, either, while they're one of my favorite fruits. :) I know I already said it on Instagram, but the lo mien looks & sounds incredible!

    I might have to get a spiralizer..... they seem like so much fun.

    It's been hot & very humid here, too, but it's supposed to start cooling off over the next week. Hopefully that weather comes your way soon!

    1. Thanks Molly! I think it's so funny that I don't like raspberries because I am a berry fanatic but I am just not a fan. And thank you, the lo mein was so yummy!

      The spiralizers are fun, I think you and Mike would have so much fun with it, especially with all of the gorgeous produce coming out of your garden.

      It was a bit cooler today which was nice but I can't even open my windows at home because of my allergies! Such a bummer.

  6. I love these kinds of posts :) I love all berries- well, actually all fruit except for papaya, but all summer i indulge until its apples for the next six months....
    So funny- i just got a spiralizer too! Its a tabletop one you crank- i made a pile of cucumber/daikon/carrot noodles for a salad, it was entirely too much fun to eat.

    1. Thank you :) I'm a total fruit fan too, there are very few that I don't like but raspberries happens to be one of them. I know what you mean, apples are good but summer fruit spoils us, it's SOOOO good!

      Yay for spiralizer fun! I spiralized three zucchinis for the lo mein and it was a ton, lasted several meals. AND it cooked down! That sounds like a delicious salad too. I'm with Shen, you need to start a blog so I can see all of these beautiful meals!

    1. Haha for the first time in my life I'm on trend :) I'm usually the one missing the memo ;) Spiralizers are fun and you can make some delicious healthy meals with them so I'm excited to experiment with it. And thanks! It was really yummy!

  8. Sarah!! Hello hello! Youve been eating sooo much good food! I've been eating terribly lately, it's awful. But finally getting back into it. I think that's why I like fall, it feels more like a new year than New Years!

    That zucchini lo mein looks awesome! I am totally going to make something similar tomorrow :)

    1. Gabby! It is so nice to hear from you :) These meals were certainly delicious but trust me I've had my fair share of less than heathy food. I'm in the same boat as you but I'm excited for the change of seasons and to welcome the warm fall fare.
