A Few Meals

Hey everyone! I hope you are all doing well. As I mentioned in my last post I am trying to be more mindful of photographing meals. I've done a not so great job I guess but I do have a few meals to share at least. Here are just a few things I ate over the past few days.

I made several of these yummy plates for lunch throughout the week. This particular one had cucumber, carrots, dolmas, hummus and sun dried tomatoes. There were some Everything Crackers from Trader Joe's on the side. This is definitely one of my favorite meals, it is so good and a perfect meal to throw together if you don't have a lot of time.

OK, so I don't know if this is a NY thing or not but this glorious breakfast was a bialy with tofu scallion cream cheese. Do people outside of NY know what bialys are and/or have them? If you have no idea what I'm talking about, you can read about what it is here. I couldn't even begin to explain. These are so good and whenever my family gets bagels there are always a few of these in the bag too.

The weather is warming up which means iced coffee time! I limit myself to having it a few times a week rather than every day but it is so tasty.

Cauliflower tacos!! I actually edited this post to add these since I JUST made them and had to share! I used the breading method in Blissful Basil's  Cauliflower Taco Recipe and just used panko breadcrumbs instead of oats. As you can see I added a lot of veggies on top of mine and used some Tofutti Better Than Sour Cream as well. There is some perfectly ripe avocado hidden under all of it as well.

Just so you can see the avocado. This was so good you guys!

My Dad's birthday was on Saturday so we all went out for dinner on Sunday. We went out for Mediterranean food and it was so good.

I started off with this plate of deliciousness. The salad was called Shepherd's Salad and was tomato, cucumber, parsley and onion (which I ate around) dressed in olive oil, lemon juice, red wine vinegar, salt and pepper. This salad is one of my favorite salads ever, it is so simple and flavorful. I also had some hummus and bread straight from the oven. I followed this up by more salad and some unpictured falafel... There was too much craziness at the table and I was entertaining Delilah so the follow up didn't happen but I assure you it was delicious.

Here is Delilah chowing down on an orange slice after the meal. She is getting so big, it is so crazy! She is so funny too :)

Things have been busy otherwise with work and trying to get some more jewelry made. I made about 16 more pendants today so I'm getting a nice stock together :) I'll show you some more pictures of those in the near future.

I hope you all had a nice weekend!

  1. Ooh, I've never heard of a bialy, but it sounds right up my alley. I love the savory onion/everything bagels the most. Also, I've noticed my NY blogger friends always eat their bagels with cream cheese sandwich-style. I always eat mine split open with cream cheese on each half. I'm gonna have to try it sandwich style though because it looks so pretty like that!!

    1. Bialys are so good!! I'm so tempted to try and make my own but I'm sure I'll end up being too lazy ;) I used to eat my bagels open faced but I've switched over to sandwich style over the past few years. It's probably because we always get them sandwich style from bagel stores :)

  2. It is reassuring to see you still do the Hummus, Carrots and Dolmas. Did you make the Cauliflower Tacos for the whole family? were they as great as they were Florida?

I have had Bialys, but prefer a humongous Begel. Although what you picture looks pretty famn irresistable. Never seen Shepherds Salad chopped into such large chunks. Beautiful. Just like your niece.

Happy Birthday to your Dad and excellent post!

    1. Haha yes, I will always eat Mediterranean plates like that. It runs in my blood :) No one else seemed interested in the cauliflower tacos but they are always welcome to eat whatever they want. They were just as delicious as Florida!

Bagels will always be number 1 in my book but once in a while a good bialy is a perfect breakfast. I definitely have to be in the mood for it, but I also know where to get the best ones ;) The Shepherds salad was so good and yes, definitely chunkier than I'm used too. It is one of my favorite salads though. I can't believe how big Delilah is getting and she is more beautiful every day :)

      Thanks!

  3. I'm totally going to steal your lunch idea!! I've been craving stuffed grape leaves, so this will hopefully happen soon!

I do not know anything about bialys, but I'm going to look it up and see if I can find one here! I'm always up for a carbohydrate. ;) I'm also so curious about the cauliflower tacos, as they look so delicious!

Sweet Delilah! She is so cute!

    1. It is such an easy and delicious lunch! Thankfully we are entering tomato season because tomatoes with hummus is one of my favorite things ever.

Bialys are really good, you will have to come to NY one day and have a proper bialy! The cauliflower taco was so good. I don't eat a ton of tacos or Mexican food in general but this meal was really fantastic.

      :)
