Throwback Tuesday: Potato Sensation!

Hey everyone. How have you all been dealing with the snow? I am so incredibly over it. It's driving me nuts. We dug out for 2 hours yesterday and then the plows came by and gifted us another mountain of snow and ice to dig through. And I think we are supposed to get more tonight. Awesome.

Not a whole lot of new stuff has been going on here. I got some really great products to review and hopefully I'll have that up tomorrow. I wanted to have it up today but I woke up feeling horribly ill so I'm going to do a throwback recipe today and bring you lots of fun stuff (and a giveaway!!!) tomorrow. I'm pretty sure I woke up with vertigo this morning and it was incredibly scary. Have any of you ever had vertigo? I woke up and stood up and was super dizzy so I got back into bed and the room was spinning!! I barely moved until I had to get up and get ready for work and I was off balance and couldn't walk straight and felt like I was going to fall over in the shower. It was crazy! Luckily I already have an appt scheduled with my Dr. on Monday so I'll talk to her about this too.

Anyway, I decided to do a Throwback Tuesday recipe. I chose this one because it is warm and comforting and so delicious. I first posted it as one of my restaurant recreations for Vegan MoFo last year. It is the Potato Sensation dish and I think you'll love it on a cold winter day. I'm going to copy and paste the post over here for you :)


A little over 3 years ago I went to Destin, Florida for a week to enjoy the gorgeous town and even more importantly to see my brother marry my awesome sister in law! It was an amazing week for sure. This was only a few months before I went vegan so I was still eating dairy and eggs, and we happened to go to this little breakfast place called Another Broken Egg Cafe. It was a lot easier for me to order back then and I remember enjoying the meal. I thought of their menu for this MoFo project and actually selected two of the menu options to recreate! Tonight I will share my first one with you :)
Ta da! Check out the Potatoes Sensation! I was immediately drawn to this menu option because it is super customizable and very easily veganizable. It’s fast, it’s hearty (a little too hearty) and it’s easy. Most importantly, it’s delicious. It is perfectly suited for any meal of the day.
Potatoes Sensation
Ingredients:
1/2 cup roasted potatoes (I used the small yellow potatoes that are nice and tender)
Mix Ins (any combo of the following):
Green Chilies, Green Peppers, Mushrooms, Tomatoes, Onions, Spinach, Broccoli, Asparagus, Chick’n, Faux Sausage, Soyrizo, Vegan Bacon, Vegan Ham, or any other veggie you can think of!
1/4 cup Daiya Mozzarella or Cheddar cheese
Directions:
1. Roast your potatoes. If you roast them a day or two before reheat in the oven until crispy and tender.
2. Cook your mix ins to your liking. Brown your faux meats, steam your veggies, anything you like! Season with salt (if you want), pepper, garlic, nooch and anything else you want! Customize to your own taste!
3. Add potatoes to the pan with your mix ins and combine thoroughly. Top with Daiya and cover the pan to let Daiya melt.
4. Transfer to your plate and enjoy!
Since the menu says to choose three mix in items I decided to stick with that and choose 3. I used spinach, faux sausage (yay for a negative celiac test! although I won’t be adding too much gluten back in to my life since I think I’m still sensitive to it), and onions. I topped it with daiya mozzarella. The menu also says to serve with an english muffin but that just seems excessive and unnecessary! I couldn’t even finish the plate as it was!
Seriously, isn’t this amazing? I threw it together after work so it is definitely a great meal if you are tired or don’t have a ton of time.
And there you have it, my first recreation from the Another Broken Egg Cafe (I hate the name by the way). My second recreation will be of the meal I actually ate there. Too bad I didn’t get a pic… although it wasn’t vegan so I guess I shouldn’t post it anyway. The vegan version is going to be AMAZING though!

  1. Had you been awake for a while before getting out of bed? I can get dizzy and nauseous if I spring right out of bed upon awakening.

    Nice looking Potato dish. Sort of like a 'Hash'.

    1. I never rush out of bed because I'm a lazy butt haha. I was probably laying around for 15-20 minutes before getting up. It was very weird.

  2. Between Shen's Nacho Potatoes and this gorgeous Sensation - I am fully inspired to make a potato dish soon!! It is super cold here right, and it has been lightly snowing all day. Overnight tonight we'll be at zero degrees, even colder with wind chill. I miss flip flops, and not having to scrape off my windshield. *sigh*

    1. I know, potato dishes have been all the rage in the blogosphere lately! Shen's potato nachos looked so good and I also loved the tot-chos on Molly's blog! So good. I miss flip flops too. I can't wait to go to Florida in march so I can wear them again.

  3. This made me hungry, and I just ate. Way to go Sarah!

    Hopefully you don't have vertigo. My sister has been dizzy for almost a month now. She's having all sorts of tests done to figure out why. She did mention that the test for vertigo was kinda fun, well as fun as doctors trying to make you dizzy while wearing goggles gets.

    If you're fine today, maybe it was just low blood sugar. When that happens to me I drink a little glass of OJ before going in the shower. All that heat makes things worse. But who could deny warmth with weather like this?

    Feel better! AKA: sit down with a mug full of hot coco and ricemellow!

      I'm sorry your sister hasn't been feeling well but that's kind of funny about the vertigo testing. My only other thought was either low blood sugar or inhaling fumes from the stupid snowblower that I hated using. I gave up on it pretty quickly but I got a headache from the fumes almost immediately so I'm wondering if the dizziness was from that too? Except a delayed reaction? Who knows. I'll keep the OJ in mind though if it happens again, thanks for the tip!

  4. I remember this recipe! :) So much good stuff going on in it. I bet it makes you crave another Florida trip something fierce, especially with all the snow & cold that's been happening this winter!

    I usually get vertigo for a day or two every month.... at the same time, if you know what I mean. I hope you're feeling all better by now!

    1. Thanks Molly! I definitely can't wait to go to Florida, I have a trip planned in 5 weeks and I'm so excited! It'll be so nice to take a break from the crappy weather and see my best friend :)
