Catching Up

Hello friends! I hope you've all been staying safe, warm and dry in this blustery weather we've been experiencing. It's no secret that I hate winter more than anything. I'm super sensitive to cold and the snow is just irritating haha. My poor fingertips have been frozen and thawed so many times over the past week or two!

I left work today and no surprises it was snowing AGAIN. I grabbed two pics and I figured I'd share them with you...

I'm not dumb enough to take pics while driving a crappy car on slippery roads... this shot was taken while stopped at a stop sign.

Slightly out of focus shot on the street corner by my house. Lots of snow as you can see.

And here's just a little bit of what has come out of my kitchen. I didn't shoot a lot but I thought you'd like to see the few pics I did take. I have been eating a lot of repeats too and I didn't think you'd need to see that.

It's been so cold that drinking juices and smoothies every morning isn't happening so I've been treating myself to delicious oatmeal when I feel too cold to deal with smoothies.

Isn't this bowl gorgeous?! Oats with cinnamon, banana, walnuts, raisins and coconut. Yum!

I couldn't even wait to get this out of the food processor to take a picture of it. This is Isa's Hummus for Bagels out of Veganomicon. I am obsessed with this stuff! It is so yummy and nice and thick and a perfect sandwich spread. Gluten is now allowed on the Crazy Sexy Diet Cleanse but she says sprouted grains are ok so I will put some of this deliciousness on a toasted Ezekiel English muffin with some fresh basil and sun dried tomatoes. It is so delicious and by far my favorite flavor combination!

This is a nice creamy batch of mashed cauliflower. Can't go wrong with this stuff. Seasoned with nooch, salt, pepper, garlic powder and onion powder.

Finally, some raw zucchini pasta with marinara sauce. Yum!

OK that's all for now. I'm hoping to get to the grocery store on Monday so hopefully I'll have a haul for you next week. We'll see though, who knows what Mother Nature has in store for us!

Hope you've all had a great week and are staying warm! Have a great night and enjoy the rest of your weekend!

  1. Beautiful pics. Hard to believe there's actually Oatmeal under all that other stuff. I know you're suffering in this cold weather. Mr. SV says he prefers the cold to the heat, but I'm no longer sure which is worse.

    1. Thanks Shen! Haha yeah the oats are usually a supporting actor in these bowls. I cook 1/4 cup oats in a cup of water and it's so filling. I feel like such a pansy now, I used to handle to cold like a champ but now I'm just a whiny brat haha. As much as I love living here and experiencing 4 seasons, I feel like I need a more consistent climate in my old age ;)

  2. I agree, they are beautiful (yet annoyingly snowy) shots! The seasons have certainly been showing off their muscles; super hot and extremely cold & snowy. I still need to try that combo on oatmeal, and it's not for lack of desire - it is due to absentmindedness! I've written down the ingredients and will get them all during next week's shopping!

I did buy a head of cauliflower yesterday, with the full intent of making a mash! I'm so excited to try it! Homemade hummus is the bee's knees.

And today I am envious of you - you are only half way through your weekend, and I have to go back tomorrow! *cries*

    1. Aww thanks Ingrid. Ugh seriously, the weather has been really extreme this year. This combo is the best ever, definitely give it a try! I can't wait to hear how you like it!

Oooh hooray for cauliflower mash! I love this stuff. My mom has been loving the homemade hummus too. She's been making sandwiches out of it with avocado and tomato, yum!

Aww well don't be too jealous because I've been feeling horribly ill the past few days. Migraines and EXTREME fatigue. I got into bed at 6pm yesterday and couldn't get out of bed until I woke up this morning. SO horrible.

  3. I can empathize with you about the cold. It's making both Mike and I very achy. Such a brutal winter so far!

You've certainly been eating well! I've got to pin that hummus recipe when I'm done commenting. I've been looking for a good one.

    1. I feel like I have no right complaining when you have -30 wind chills! That's insane! It has definitely been brutal, I'm just so over the snow.

Thanks! This recipe is really delicious, I love that it's purpose is for spreading on a sandwich. So delicious.

  4. Yuck, that weather sounds awful. :( I can't bring myself to eat cold foods like smoothies when it's cold outside either. I freakin' LOVE your hummus! It looks so good. I recently read an article on BuzzFeed called "How to Tell If You're in a Relationship With Hummus" and it was all true! I probably love hummus a little too much to be normal. :)

    1. I can't stand this weather. It is sucking my soul away! I have vowed to make this my last NY winter lol. The hummus was so good! Perfect on sandwiches! Haha I think hummus is pretty much the best food ever and lot of us have a bit of a hummus addiction ;) I love it on pita chips with a sun dried tomato on top, yum!
