Throwback Thursday: Snack Time!

Hey everyone! Soooo I missed yesterday but I'm going to make it up tomorrow! I even have the pictures ready to go! I ended up meeting a friend for breakfast and spent three hours catching up so I was out from about 9:15 am until 9:15 pm.  Needless to say I was exhausted so the post didn't happen but it will, I promise!

I'm here today with another Throwback Thursday post with two fun snack recipes. First is my favorite... VaVaBars!!


Orange Coconut Larabars (aka VaVaBars)
2 cups dates
1 cup raw almonds
1 cup dried shredded coconut
1 tsp vanilla extract (I used alcohol free)
zest from 1 orange
juice from 1/2 orange
Directions:
1. Add almonds to food processor and chop into small pieces.
2. Add the rest of the ingredients to the food processor and process until well combined and forms a sticky dough. Texture is up to your discretion, I like mine a little smooth but you can leave yours chunky!
3. Take dough from food processor and transfer into a loaf pan lined with plastic wrap.
4. Press dough down until packed very tight. Cover top with plastic wrap overhang.
5. Refrigerate for an hour until it firms up a bit.
6. Remove from loaf pan, uncover and cut into bars. Wrap each bar and store in fridge or freezer.
7. Enjoy!

Next up, Apple Cinnamon Chips!


Raw Cinnamon Apple Chips
Ingredients:
2 large apples (I used organic gala apples)
Juice of 1/2 lemon
cinnamon to taste
Directions:
1. Slice the apples as thin as possible. I used a mandolin but you can slice by hand. It may take longer to dehydrate depending on the thickness if you slice by hand.
2. Toss sliced apples with the lemon juice to prevent browning.
3. Place apple slices on your dehydrator trays and sprinkle with cinnamon.*
4. Dehydrate at 104 degrees for 12-16 hours until completely dry. Enjoy!
*The lemon can leave a bit of a tart taste so if you are inclined to you can sprinkle some raw sugar on top as well to bump up the sweetness. I didn’t use sugar and I thought they were fine but it all depends on your taste!

This Week In...

Hey everyone. Hope you all had a good week last week. Sorry I wasn't around, it just turned out to be really crazy and not a great week so I just stepped back for a couple of days. I had intended to post yesterday but the day completely got away from me between watching Delilah (she had slept over from Saturday to Sunday), baking vegan cookies for my friend's daughter (egg and dairy allergies) and this same friend's baby shower. By the time I got home I was exhausted and basically ended up being useless the end of the day.

As you know I'm supposed to post my Instagram photos from last week on Mondays but once again I failed on the Instagram front. However, I thought it would be hilarious to post some of the photos in my Photobooth gallery since those are always fun. This shows how much I love all of you because I look like a mess in pretty much all of them ;) The guy in some of the photos with me is my best friend that I go to visit in Florida.


I don't know why I love this picture because it is horrible but I do. It's actually one of my favs, probably because you can't see my face, ha!

THrowback Thursday: Baking with Carrots

Hey everyone! I'm sorry I haven't been around this week, the end of last week was pretty bad so I just haven't been keeping up with my photographs. Hopefully I'll get back on track but for now I'm back with a Throwback Thursday recipe post.

Today's Throwback Thursday recipes are very similar to each other. I made my Gluten Free Carrot Spice Oat Bread first and slightly amended the recipe to make some muffins. I'm posting both recipes here for you today!


Cooling in the pan!


Carrot Spice Oat Bread

Dry Ingredients:
1 1/2 cups oat flour
1/2 cup whole oats
1/4 cup vegan sugar
1 tablespoon ground flaxseed
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
3/4 teaspoon ginger
1/8 teaspoon ground cloves
1/2 teaspoon salt

Wet Ingredients:
1/3 cup maple syrup
1 medium banana, mashed
1/2 cup plant milk (I used unsweetened vanilla Almond Breeze)
1 tsp vanilla

Add In Ingredients:
1 1/2 cups shredded carrot
1/4 cup raisins
1/4 cup chopped walnuts

Directions:
1. Preheat oven to 400 degrees. Spray a loaf pan with non-stick spray and set aside.
2. Mix together all dry ingredients in a large bowl. Make sure all ingredients are well incorporated. Mix wet ingredients together in a separate small bowl. Add the liquid ingredients to the dry and stir to combine.
3. Add the carrots, raisins and walnuts and mix entire batter together. It will seem like there are more add-in ingredients than batter but just mix together as best you can.
4. Pour batter into the loaf pan. Bake for about 25-27 minutes until there is a little resistance in the loaf.
5. Remove from oven and cool in loaf pan for about 5 minutes. Transfer loaf from pan onto a cooling rack and let rest until completely cool. 



And now the slight variation on this recipe!

So there you have it. Another throwback recipe. I don't know if I'll have a Nerd Alert post for Saturday but I'll work on a review for Sunday for sure. Hope you are all having a great week so far! The weekend is almost here :)

Show & Tell Sunday: Go Brooklyn Munchies! Review

Hey everyone! Hope you are all having a great weekend. I'm so glad you seemed to enjoy my first Nerd Alert! post. I am so excited about starting that series, it has definitely given me something to look forward to in the spring. Today's Show & Tell post is another review, this time for Go Brooklyn Munchies! I was so excited to try this product and got a little carried away taking pics. It should make up for the lack of pictures in yesterday's post.


So as you may recall, I purchased the lemon flavor from Whole Foods in my last shopping trip. I had actually put off trying them for about a week but then I was in the mood for something fun and new but also healthy so I tore into the bag.


Look how cute these little flavor packed nuggets are. Especially in my adorable little panda bowl gifted to me by my dear friend Laura. I seriously couldn't wait to dig in.


Before I tell you how it tastes let me just fill you in on the amazing stats for this product. They are gluten free and certified organic. Seven pieces contain only 146 calories and boasts 4 grams of protein and 4 grams of fiber. Not too bad! The real question is how do they taste?

Well, these things taste AMAZING!! The oat flavor comes through pretty prominently and I love oats so that is ok with me! It is not overly sweet and has a nice lemony tang to it. They have a great texture to them as well. They are crispy but not quite like biscotti. They have a bit of chew and give to them (as opposed to be totally crunchy). I guess my only wish is that the lemon flavor would come from lemon juice and lemon zest instead of lemon oil. I find that provides a fresher taste but even so, the flavor in these little bites is fantastic. I highly recommend them and I'm looking forward to trying their almond cookie flavor as well!

So there you have it! There is no disclosure for this review since I paid for the product and have never been in contact with the company. I love finding new products and reviewing them for all of you and I can't wait to do it again next week!

Nerd Alert! An Introduction to The Gold Coast Series

A few months ago I decided to change the name and overall theme of my blog. While I enjoyed running a vegan blog for about 3 years, I had come to realize that there is so much more to me than just my veganism. I felt confined in my writing and decided to create a new space for myself and start over. A space where I can explore the things that excite me, that interest me and that I'm passionate about. I call myself a nerd, but I'm not necessarily interested in traditionally stereotypical "nerdy" subjects. You won't find me watching Sci-Fi or Fantasy, participating in Live Action Role Play, reading comics or completing lab experiments in my basement (and for the record if you enjoy one or more of these things that's awesome! I'm just not into these particular things). Instead, the core of my "nerdiness" is my insatiable curiosity about the world around me.

Although I can say with confidence that learning is one of my greatest passions, I was by no means a model high school student. I dreaded assignments as much as everyone else and put them off until the very last possible minute. I would only read enough to be able to complete my assignments and do well on my exams. I always did well in school, but truthfully, I don't feel as though I left school with a broad knowledge of "the classics," mathematics or history. The most valuable skill that I took from my studies in high school is the skill to extract important information and craft it into a cohesive argument or explanation.

College was my turning point. I could choose the subjects that I would study. This made ALL of the difference. It ignited my passion for learning and allowed me to indulge in it. I took classes that excited me and was given the freedom to explore topics that I wanted to learn about. When given a list of paper topics I would request to be allowed to write about a topic that I came up with on my own. I would find myself in the library or online reading about topics that had nothing to do with my studies at all. For example, after the Southeast Asian Tsunami in 2004, I could not read enough about tsunamis. For someone that has never taken a Geology course (much to my regret nowadays) I could tell you a hell of a lot about tsunamis.

Those habits have become a big part of who I am today. It is not uncommon for me to spend an entire evening searching for as much information as I can about a random topic that I find interesting. Most people know that I am incredibly passionate about weather and geology. I have never taken a course in either of these topics outside of my 8th grade Earth Science class but I have spent countless hours reading about them. It goes far beyond these two topics as well, and last weekend was a perfect example of this.

For some random reason last weekend I was thinking about The Great Gatsby, which is in my opinion one of the greatest books ever written. *Side note - no, I still have not seen the most recent version of the movie.* Rather than just re-read it, I decided to start a search on the book, its historical implications, the inspiration behind the story, and F. Scott Fitzgerald's life. I was aware that the story is inspired by the lifestyle of the wealthy and elite that lived on the North Shore of Long Island and became fascinated by just how much of a connection I feel to these places. And this is where my idea for the "Gold Coast Series" was born.

While I spent HOURS that night reading and watching videos about how Long Island's Gold Coast (North Shore) would become the vacation spot for the wealthy Manhattanites, my curiosity was in no way satisfied. The further I ventured in the more clear it became to me that this was just the beginning. Honestly, it is pretty much impossible to live on Long Island AND work in the wedding industry and not know of the Gold Coast Mansions. Not only do I live minutes away from some of these mansions, I have actually been to most of them at some point. Nowadays, a lot of these mansions have been converted to catering halls for upscale affairs and nature preserves so I have been to A LOT of these mansions within the past few years with work. In addition, the village of Sands Point (which is probably one of my absolute favorite towns on Long Island) is said to be the inspiration for East Egg in The Great Gatsby. I was always awe inspired by the absolutely stunning homes and scenery in Sands Point. I'll talk more about this in a future post.

It is clear that I have only scratched the surface with all of the information out there about the Gold Coast, its history and how it exists today. I decided that for my first "Nerd Alert" series, I would not only research more about the Gold Coast and its mansions, but I would actually go and visit as many of them as I possibly can. This will be my spring time project (some of the mansions and the grounds are closed for the winter) and it will combine my love of learning with my hobby of photography. It will allow me to appreciate these mansions, the grounds and nature preserves in a way I never could when I would go with work. As of right now my goal is to visit at least four of the mansions: Sands Point Preserve (in the Village of Sands Point), Coe Hall (located in the Planting Fields Arboretum in Oyster Bay), Old Westbury Gardens (in Old Westbury), and the Vanderbilt Mansion (Museum and Planetarium - located in Centerport and my personal favorite mansion/estate). I'm still debating whether or not I'll go to Oheka Castle as just this week the owner was shot in the head as an apparent botched hit attempt on the grounds of the estate (read more about it here). I say botched because the owner is alive and in stable condition now. As of right now I'm thinking I'm going to skip it but we'll see what happens as spring approaches.

So there you have it, a little bit about how I define my nerdiness and an introduction to my new spring project and first "Nerd Alert" series. I can't even describe to you how excited I am about this as it combines a few of my favorite things: research, learning, photography, exploring, and being outside. Most importantly, it's igniting a fire in me that has been out for a while now. And I can't think of a better way to jump in to the nerdy content on my "Long Island Nerd" blog than to nerd out about Long Island. I am planning on writing a full blog post on each visit so there will be at least four posts. I hope you enjoy reading this series as much as I am enjoying writing it.

Throwback Thursday: Veggie Benedict

Hey everyone. This post is probably going to be kind of short because I had a bad day and am in a bad mood and don't want to get all crazy in a public forum haha.

Here is another trip down memory lane with a throwback. This recipe was part of my Vegan MoFo restaurant recreation theme and is my Veggie Benedict. Enjoy!


Veggie Benedict
Ingredients:
1 Whole Grain English Muffin (I used Ezekiel)
1/2 cup firm tofu
1/3 cup chopped onion
1/3 cup chopped tomato
1 packed cup baby spinach
2-3 tbsp favorite Vegan Hollandaise sauce (I used the Vegg Hollandaise Recipe)
Directions:
1. Toast English muffin and prepare your hollandaise sauce.
2. Brown tofu in a skillet. Remove the tofu then add onion to hot pan. Cook onions until soft and slightly browned.
2. Once onions are cooked, add spinach to the pan. Cover pan until spinach is wilted (about 2 minutes).
3. Uncover pan and add tomatoes and tofu to pan. Season with your favorite seasonings. I use pepper, garlic and nooch.
4. Once tofu scramble is finished, spoon the mixture on top of the english muffin halves. Top with hollandaise and enjoy!

It's not pretty but it does taste good.


There you have it, my version of Another Broken Yolk Cafe's Veggie Benedict. I had such a good time with that MoFo theme, too bad it was too rich for my tummy. I'll have to start doing more restaurant recreations again, just spread them out this time.
