Time Flies

My oh my, has it been a month already? Sorry guys, I know I kind of fell off the face of the earth but it has been crazy over here. My boss had a baby, my co-worker has gone back to school to earn a certification and then there's me. It seems to have evened out and my hours are back to normal but the first couple of weeks there were some extra hours thrown in and I was working a lot of evenings. Add some anxiety and depression in the mix as well as some computer problems and blogging just wasn't in the cards.

I'm hanging out at my brother's house today and tomorrow and I currently have Tyler cuddled up next to me. I decided to post a quick grocery haul from this morning and I have some old pics (digging into the archives for these - they've been posted before but I figured recycled pics are better than no pics) of some things I've been eating lately. Hopefully the yuck will pass soon and things will get back to normal but this is what I've got for you right now.

First up is my produce haul. Some chard, carrots, gala apples, sweet potatoes, cauliflower, pears and garlic.

Skinny Pop popcorn, Whole Foods Unsweetened Vanilla Almond Milk (they finally brought it back!), frozen brussels sprouts to keep on hand, roasted cauliflower and broccoli (because I'm lazy and they had it) and some Tofutti so I can finally try those damn Pumpkin Bagels I got from Trader Joe's ages ago.

I immediately thought of Shen when I came across this freezer case and had to take a pic for her. Check out all of the different holiday roasts/stuffed faux turkey options. I was pretty impressed by the selection but walked out without any of them.

These are the kinds of things I've been eating lately:

Lots of oats. I love changing up the toppings and I've been using bananas lately, apples and of course the one pictured above is a great combo.

Lots of stir fries because they are quick and easy.

DIY burrito bowls.

I've been LOVING apples lately and really eating a lot of them. I'm going to cook up the chard with some garlic, a teensy bit of tamari, some onions and some nooch and eat that with brown rice or quinoa and some mashed cauliflower. I'm going to try moving back toward Crazy Sexy Diet type eating for the winter since I get sick so easily (I've had a cough for two months and it won't go away!) so hopefully that will help me stay healthy and maybe even improve my mood.

Things have been the same otherwise. Delilah turns three next week, I can't believe how quickly the time has gone! Now it's cuddle time with Tyler.

I hope you've all been well!

  1. I've never seen that 'Whole Vegan Turkey' in the middle. Doesn't appeal to me, but apparently it's been around for years and this reviewer liked it:

I hope things slow down for you and you can post more frequently.

    1. Haha I thought the whole vegan turkey was odd too. I'm actually not a fan of the roasts and all of these products but I was just amazed by how many were available now as opposed to even a few years ago! That is the part I love :)

Thanks, me too! I think I just need to pull myself out of this funk and I'll be more inclined to post a bit more.

  2. How wonderful to see a post from you on my Blogger Dashboard! I know how life gets sometimes, and I'm happy your schedule is returning to normal as well as having a weekend with furries. I'm certain Tyler and the cats are loving having you around!

I have yet to pick up anything Thanksgiving turkey-ish, but I intend to do some poking around to see if anything strikes my interest. How will you be spending the holiday? This is from a while ago, but what did you end up thinking about Eat to Live?

    1. Thanks Ingrid :) Life has definitely been in full gear and having time with my fuzzy babies is just what I need. We've been enjoying lots of cuddle time and it's just what my soul needs.

I haven't picked up any roast like products either and I won't but I just loved how many options vegans have now. I'll be with my family for Thanksgiving, it's always a nice day and I'm looking forward to it.

I really enjoyed Eat to Live and I think that it makes a lot of sense. I think that eating a pound of raw veggies and a pound of cooked veggies a day is impossible for me but I do like the idea of it. I think that combining it with the principles of Crazy Sexy Diet (which are fairly similar) is probably the way I'm going to go.

  3. I'm glad to see you blogging again! Sounds like it's been crazy for you lately and I'm sorry to hear that anxiety & depression have been making things more difficult. It's definitely a bad time of year for those.

One of my co-workers had a baby and another quit, so it's been crazy for me as well along with taking care of Mike while he recuperates (in other words, I'm also coping with anxiety & depression a bit). Things are getting better, though, and I hope they both keep getting better for us both!

Glad you can try pumpkin bagels. I need to get my hands on some of those.

    1. Thanks Molly! It's been a bit crazy here for sure. It is definitely a bad time of year for depression, sadly I've been dealing with it during my favorite time of year!

Oy I definitely know how you feel, I'm sorry things have been crazy at work. I know you've been taking care of Mike as well and I hope that you've been taking time to take care of yourself as well. I agree, I hope that things get better for both of us as well.

I'll let you know how they are!
